TRAP PROGRAM
Requirements
for restaurants and the food service industry
The
discharge of organic grease into the Greene County Sewer System has become a
rapidly increasing problem. When
organic grease solidifies in the sewer mains, it entraps solids and forms a hard
deposit that decreases capacity or causes a blockage, creating system overflows
or backups that damage user’s property.
In
an effort to address this problem, the Greene County Board of Commissioners
adopted regulations in 1996 requiring all business, commercial, or institutional
sewer users that have a food service, preparation or disposal operation
discharging food waste to the sewer to:
1) Install a grease trap
(interceptor) of a design approved by the Sanitary Engineer, in compliance with
the Ohio Plumbing Code and as approved by Greene County Plumbing Inspection.
2) Clean existing or
newly installed grease traps on a three (3) month frequency, and provide proof
of such cleaning.

If
the responsibility for maintenance of your establishment is coordinated through
a regional or district office, please provide the appropriate name of contact,
mailing address and phone number.
All business, commercial or institutional sewer
users that have a food service, preparation or disposal operation discharging
food waste to the sewer must clean their grease traps quarterly and proof of
cleaning must be submitted quarterly. This
can be submitted by either yourself or your cleaning service.
